Delicious coconut, banana & buckwheat lovelies from GrowEatHeal’s tips for healthy living that are gluten free and sugar free.

Recipe for gluten free pancakes.

1/4 cup shredded coconut

1/4 cup buckwheat flour

1 whole ripe banana

8 quail eggs or 2 hen eggs

1/4 cup Runny yoghurt, kefir or cream

In the thermomix or blender;

Blend the banana and eggs

Add the coconut, flour and 1/2 liquid – blend

Add the rest of the liquid and blend to a smooth batter paste – the smaller the banana the less liquid.

Pour from blender into a hot pan with coconut oil, in large pancakes or as you like. Flip when ready.

Serve with yoghurt, maple syrup and a spoonful of shredded coconut on top.

Add fresh fruit.

Very yum.
