This gut-buster lunch takes 90 seconds to make and is wonderfully filling.

Gut-buster lunch – ingredients

  • 1 avocado – soft and ripe
  • 1 tomato – seeds removed
  • 1/2 tsp of chopped crushed chilli (fresh if you prefer)
  • 1 dessert spoon of chia seed
  • Squeeze of lemon
Throw all food into a Zyliss chopper or use a hand-held wand and chop until its smashed
Spoon mixture onto lettuce leaves. Roll up and eat. Scrumptious and quick.

Nutritional notes on this hunger-busting healthy lunch

Avocado – vitamins C, K, B5, B6 and E. It’s also a great source of potassium. Although it’s high in calories, it is full of healthy monounsaturated fats. It contains mannoheptulose. This sugar inhibits the release of insulin, so it’s a great food for diabetics and those trying to lose weight.
Chia seeds – omega-3, protein, and fibre. They boost your metabolism and help to suppress your appetite. They work within the body to take the fat-burning hormone glucagon up to its highest potential.
Lemon – helps your digestion.
Chilli – vitamin C (Ascorbic acid), B-6, A, iron, copper, potassium.
Tomato – all of what the chilli has, plus a bit extra
Lettuce – Vitamin A, K and folate. Sterol helps reduce cholesterol in your arteries. Protects against macular disease.
