Chia seeds contain amazingly high levels of omega-3 fatty acids which are greatly lacking in the typical western diet. In fact, over half of the fatty acids found in chia are omega-3, making it one of the richest known plant sources. Chia is also a source of protein, calcium, iron, magnesium, phosphorous, vitamin B1, niacin and zinc.
They are also high in soluble fibre and are extremely hydrophilic meaning that they attract and absorb water very well. This makes chia a great, sustaining food choice as they provide a feeling of fullness long after you have consumed them, keeping you satisfied and energised throughout the day.
Sprinkle over breakfast cereal, salads or yoghurt, incorporate into smoothies, juices, soups, home baking, puddings and breads. To use as an egg replacement in baking simply combine 1 tablespoon chia seeds with 3 tablespoons cold water to form a gel.
